I now go camping with my own family and love to see how much my son enjoys it. Whenever we make s’mores by the campfire, he gets so excited (and so messy!) But I mean, who wouldn’t get excited about the classic combination of toasted marshmallows, melty chocolate, and graham crackers? It's like a warm hug for your taste buds. However, we can't always escape to the wilderness to enjoy this camping tradition so, I’ve got a yummy solution for you!
S'mores Drop Cookies to the Rescue:
Enter the S'mores Drop Cookies! These delectable treats are an ode to the beloved campfire snack, but with a twist of delightful cookie magic. Picture yourself biting into a soft, chewy cookie filled with melty chocolate chunks, topped with gooey toasted marshmallows, and hints of cinnamon that warm your soul. The best part? These cookies are so easy to make; you'll have a batch ready in no time!
Ingredients for S'mores Drop Cookies:
For the cookie dough
8 oz butter (softened)
1/3 cup brown sugar
1 1/2 tablespoon honey
1/2 tablespoon molasses
1 teaspoon vanilla extract
1 1/2 cup flour
1/2 tablespoon cinnamon
1/2 teaspoon baking soda
1/8 teaspoon salt
½ cup semisweet chocolate chips (I use a combination of regular and mini sized to get variation in every bite)
10oz bag of Mini marshmallows (there will be left over)
For the cinnamon sugar coating
· ½ tablespoon cinnamon · ¼ cup white sugar
Baking Instructions:
Preheat your oven to 350 degrees Fahrenheit and prepare a baking sheet with parchment paper.
In a large mixing bowl, cream the butter, brown sugar, honey, molasses, and vanilla together.
In another bowl, mix the flour, cinnamon, baking soda, and salt. Add this dry mixture to the wet and mix until it forms a chunky mixture. (It will appear as if there are flour covered pieces of dough.
Use your hands to combine the mixture so that everything is evenly incorporated.
Fold in the chocolate chips.
Use a medium ice cream scoop or large spoon (about the size of 2 tablespoons) to drop of cookie dough onto the prepared baking sheet, leaving enough space for the cookies to spread their marshmallow wings.
Let the dough child in the fridge for about an hour or 20 minutes in the freezer
Combine the cinnamon and sugar for the cinnamon sugar coating.
When the dough has chilled, dip the cookies into the cinnamon sugar making sure to coat the entire cookie and place back onto the prepared cookie sheet.
Place mini mountains of marshmallows onto each of the cookies. (if your marshmallows keep falling off, you can pop a good amount of them onto a microwave safe dish and heat for 5-10 seconds. This will help them stick together as well as stay on the cookie. BE CAREFUL! Hot marshmallow can burn.)
Bake for 12-15 minutes.
Once they have a slightly darker edge, take them out of the oven and let them cool (if you can resist!).
