Spooky Delight: Black Out Spider Macarons for a Halloween Treat!


Halloween is just around the corner, and what better way to celebrate than with some deliciously spooky treats? As someone with a special fondness for Halloween, I wanted to create a dessert that embodies the essence of this fun and thrilling holiday. Enter the "Black Out Spider Macarons," a treat that combines the delightful flavors of black sesame seeds and black cocoa powder in a creepy yet tasty dessert.

The Inspiration: Black is the New Orange

When brainstorming for a Halloween dessert, my mind naturally gravitated towards the color black. It's a hue that symbolizes mystery and intrigue, making it perfect for this occasion. Black sesame seeds and black cocoa powder immediately came to mind. I was eager to marry these flavors, as black cocoa provides a rich chocolatey taste while black sesame adds a delightful nutty dimension. To ensure a uniform black color, I added a touch of black gel food coloring.

Halloween Magic: A Night of Ghoulish Delights

Halloween holds a special place in my heart, as it's a night to relive the joys of childhood. From dressing up in spooky costumes to indulging in a plethora of candies and desserts, the festivities always bring out the kid in me. Creating these Black Out Spider Macarons is my way of adding a touch of magic to this already enchanting night.

Recipe: Black Sesame Macaron Shells

Ingredients:

  • 52g egg whites

  • 44g sugar

  • 12g ground black sesame seeds

  • 58g almond flour

  • 60g powdered sugar

  • *Optional: Black gel food coloring

Directions:

  1. Prepare the Meringue: In a clean bowl, whip the egg whites until frothy. Gradually add the sugar while continuing to whisk until stiff peaks form.

  2. Combine Dry Ingredients: In a separate bowl, mix the ground black sesame seeds, almond flour, and powdered sugar. If you are adding black food coloring, this is the time to add it. Start with a small dot and add more to it as desired. Food coloring does develop over time so try for a deep grey.

  3. Fold the Ingredients: Gently fold the dry ingredient mixture into the meringue until a smooth, shiny batter forms.

  4. Pipe the Macaron Shells: Transfer the batter into a piping bag fitted with a round tip. Pipe small circles onto a baking sheet lined with parchment paper.

  5. Rest and Preheat: Allow the piped macaron shells to rest for about 30 minutes to develop a skin. You will know when it is ready because you should be able to touch the macaron without any tackiness. Meanwhile, preheat your oven to 310°F.

  6. Bake: Bake the shells for 15-17 minutes, rotating the tray halfway through.


Recipe: Black Cocoa Buttercream

Ingredients:

  • 1 cup softened butter

  • 4-5 cups powdered sugar

  • 1 tsp vanilla extract

  • 1/3 cup black cocoa powder

  • Milk (start with 3 tablespoons and add more as needed for desired texture)

Directions:

  1. Cream the Butter: In a mixing bowl, beat the softened butter until creamy.

  2. Add Cocoa and Vanilla: Mix in the black cocoa powder and vanilla extract until well combined.

  3. Incorporate Powdered Sugar: Gradually add powdered sugar, mixing until smooth and creamy. Adjust consistency with milk as needed.

Decorating Your Spooky Masterpiece

To complete these spider-themed macarons (See video tutorial below):

  1. Create the Spider Web: Decorate one half of the macaron shell with a white royal icing or melted coating chocolate in a spider web design.

  2. Add the Spider: Place a purple royal icing or melted coating chocolate spider on top of the spider web.
